Ingredients

  • 1/2 teaspoon baking powder

  • 1.5 tablespoons sugar or stevia for a sugar-free option
  • 1/3 cup finely grated carrots
  • 1 tablespoon milk dairy or plant-based
  • 1 tablespoon vegetable oil or melted butter
  • 1/2 teaspoon vanilla extract
  • Optional Frosting:
  • 2 tablespoons cream cheese or vegan cream cheese
  • 1 tablespoon powdered sugar
  • A few drops of vanilla extract

Instructions
 

  • Mix the dry ingredients: In a microwave-safe mug, combine flour, baking powder, cinnamon, salt, and sugar. Blend until evenly distributed.
  • Add the wet ingredients: To the same mug, add grated carrots, milk, oil or melted butter, and vanilla extract. Stir until just combined; avoid overmixing.

  • Prepare the frosting (optional): While the cake cools slightly, mix cream cheese, powdered sugar, and vanilla extract in a small bowl until smooth.
