Ingredients
  

  • For the Crust
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 5 tbsp melted butter
  • For the Filling
  • 4 8 oz cream cheese packs, softened
  • 1 1/4 cups granulated sugar
  • 1 tbsp cornstarch
  • 1 cup sour cream
  • 1/2 cup heavy cream
  • 4 large eggs
  • 1 tsp vanilla extract
  • 2 tsp lemon juice
  • Zest of 1 lemon

Instructions
 

  • Mix graham cracker crumbs, sugar, and melted butter. Press into the springform pan's base and sides. Bake for 10 minutes; let cool.
  • Beat softened cream cheese until smooth. Add sugar and cornstarch, then blend in eggs one at a time.
  • Mix sour cream, heavy cream, vanilla, lemon juice, and zest until smooth.
  • Pour batter over crust. Place the pan in a roasting pan with hot water halfway up the sides.
  • Bake for 1 hour. Turn off oven and cool with the door ajar for 1 hour.
  • Chill in the refrigerator for at least 4 hours or overnight before serving.
