- For the Crust
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 5 tbsp melted butter
- For the Filling
- 4 8 oz cream cheese packs, softened
- 1 1/4 cups granulated sugar
- 1 tbsp cornstarch
- 1 cup sour cream
- 1/2 cup heavy cream
- 4 large eggs
- 1 tsp vanilla extract
- 2 tsp lemon juice
- Zest of 1 lemon
Mix graham cracker crumbs, sugar, and melted butter. Press into the springform pan's base and sides. Bake for 10 minutes; let cool.
Beat softened cream cheese until smooth. Add sugar and cornstarch, then blend in eggs one at a time.
Mix sour cream, heavy cream, vanilla, lemon juice, and zest until smooth.
Pour batter over crust. Place the pan in a roasting pan with hot water halfway up the sides.
Bake for 1 hour. Turn off oven and cool with the door ajar for 1 hour.
Chill in the refrigerator for at least 4 hours or overnight before serving.
