Ingredients
  

  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 3 ripe bananas mashed
  • ¾ cup granulated sugar
  • 1 egg
  • cup vegetable oil
  • 1 tsp vanilla extract
  • ½ cup chocolate chips

Instructions
 

  • Preheat your oven to 350°F (180°C) and line a muffin tin with liners or coat it with non-stick cooking spray.
  • In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt until combined.
  • In another mixing bowl, mash the ripe bananas with a fork or potato masher until they are smooth.
  • Add the granulated sugar, egg, vegetable oil, and vanilla extract to the mashed bananas and whisk until well combined.
  • Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix, as this can result in tough muffins.
  • Fold in the chocolate chips until evenly distributed throughout the batter.
  • Using a spoon or scoop, fill each muffin cup about 2/3 of the way full with the batter.
  • Bake the muffins in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Once done, remove the muffins from the oven and allow them to cool in the muffin tin for 5 minutes before transferring them to a wire rack to cool completely.
